Coffee is not just a drink—it is a story, a tradition, and a connection to my roots. Born in Ethiopia, the birthplace of coffee, I grew up with the aroma of freshly roasted beans filling the air, the sound of the ceremonial jebena (clay pot) bubbling over hot coals, and the warmth of community shared over every cup. Coffee is in my blood, and it is my honor to bring this legacy to you.

At Addis Coffee Roastery, we don’t just roast coffee—we celebrate its journey from the highlands of Ethiopia to your cup. Every bean is sourced with respect for the farmers who nurture it and the land that gives it life. We roast with care, ensuring each batch honors the rich, vibrant flavors that only Ethiopian coffee can offer.

The Amsterdam and Ethiopian Meba Erifera is the driving force behind Addis Coffee. For some time she had been thinking about importing coffee from her home country. After all, Ethiopia is the origin of the wild Arabica coffee and millions of people are involved in coffee production.

Ethiopians love coffee. About half of the coffee harvest is consumed domestically. In the cities, you can't avoid drinking a macchiato in the numerous patisseries. Above all, the country has a lively tradition of coffee preparation, in which coffee beans are roasted on charcoal, then crushed in a mortar and then boiled in a clay coffee pot, the djebenna. Over and over again, for one pot of fresh coffee. She doesn't expect the Dutch coffee drinker to spend so much time and devotion on a cup of coffee. However, the coffee she sells certainly deserves it!

Sourcing

 

At Addis Coffee, sourcing is about relationships — not just transactions. We work directly with smallholder farmers in Ethiopia, with a focus on empowering women producers who have been the backbone of coffee cultivation for generations. Every bean we roast is traceable to its origin, grown at high altitudes in nutrient-rich soil and harvested by hand with care. By paying fair prices and building long-term partnerships, we support sustainable farming practices while preserving the unique terroir and flavors that make Ethiopian Arabica coffee so extraordinary.


Roasting

We believe the only way to identify unique flavors is to continually try new and innovative roasting profiles, but also to remain open-minded about new innovations in processing methods, emerging coffee origins and new discoveries in coffee varietal genetics. We roast on an IMF machine that provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows to properly develop coffees in a shorter time. The result is clean, bright and sweet coffees.
